How to make Spicy Curry with Drumstick n Radish / Kara Kuzhambu Recipe with Drumstick n Radish.

Drumstick with Radish is one of the best combo of vegetables for making Kara kuzhambu, a spicy south indian curry. It taste very well with steamed rice and papad. Let's know how to make it.

Ingredients :

Drumstick - 1 ( cut into medium size pieces)

Radish - 4 ( cut into medium size pieces)

Shallots / small onion - 1/2 cup

Ripped tomatoes - 2 ( chopped)

Tumeric pwdr - 1/2 tsp

Red chilly pwdr - 2 tsp

Coriander pwdr - 2 tbsp

Fenugreek pwdr - 1/4 tsp

Tamarind pulp - 3 tbsp

Jaggery - 1 tsp ( optional)

For grinding :

Shallots / small onion - 5

Garlic - 7 pods

Ginger - 1 inch

Curry leaves - 1 string

For seasoning :

Sesame oil / oil - 5 tbsp.

Mustard seeds - 1 tsp

Fenugreek seeds - 1/2 tsp

Green chilly - 2 ( slit)

Method :

In a mixie , add all the grinding ingredients n crushed it... don't make it into paste form.

Heat pan with 2 tsp of oil , add shallots / small onion , tomatoes , drumstick , radish one by one. Saute it for few minutes in oil very well.

Add the crushed ingredients into the pan , saute it till the raw smells out. Now add the turmeric pwdr , red chilly pwdr , coriander pwdr , fenugreek pwdr into the pan. Saute it in low flame for few seconds.

Add enough water , let it boil until drumstick n radish gets cooked. Once the drumstick n radish cooked well , add tamarind pulp n jaggery into the Kara kuzhambu.  Cook for 5 more minutes.

Now heat another pan with 3 tbsp of oil for seasoning , add all the seasoning ingredients and saute it for few seconds. Add the seasoning into the Kara kuzhambu. Tasty Kara kuzhambu with drumstick n radish is ready to serve.

Serve with steamed rice , poriyal n kootu.

How to make Gulab jamun at home

Gulab jamun is all Time favourite Indian desert during all the family occasions and festivals.

Let's see how to make Gulab jamun at home.

Ingredients :

For making dough :

All purpose flour - 6 tbsp

Milk powder - 2 cups

Ghee - 2 tbsp

Milk - 8-10 tbsp

Baking soda - 1/4 tsp

Ghee / oil - for frying jamuns.

For making sugar syrup :

Sugar - 2 cups

Water - 2 cups

cardamom - 5

Lemon juice - 1/2 TSP

Rose essences - 2-3 drops

Saffron strands - few

Sliced almonds n pistachio - for garnishing.

Step 1 :

For making sugar syrup :
Take a pan, add sugar and water. Once the sugar dissolves completely, starts to boil ...turn the flame down to low. Let it be simmer for about 15 -20 minutes, cook till syrup thickens a bit. Don't boil the sugar syrup too much.

Add few drops of lemon juice to the syrup to avoid sugar crystallization. Add the  rose essences and saffron strands into the sugar syrup.  Keep the sugar syrup aside.

Step 2 :

For making Dough :

Mix all the given ingredients in a mixing bowl, mix it well with hand and add milk gradually to make dough form. Don't give more hand pressure on the dough, it makes dough harder.

Takes small portions of the dough make into a small smooth balls without any cracks on the outer surface.

Step 3 :

Frying the jamuns :

Heat the oil / ghee in a frying pan. Check the temperature of the oil. It should be medium, not on high flame. Once oil gets heated, drop a small piece of Dough into the oil, it should come to the upper surface of the oil immediately. This is the correct temperature for the oil for frying the jamuns.

Then starts drop the jamuns into the oil one by one slowly and fry the jamuns  until golden brown colour.

Once the jamuns become uniform golden brown in all the sides, take it from the oil and drop it into the sugar syrup. Keep the sugar syrup warm while adding jamuns.

Let all jamuns soak in the sugar syrup for minimum 2-3 hours before serving. Garnish with sliced almonds n pistachios....serve it warm or cold.

It is so easy and simple to make at home.
